  • 100g soya yogurt​

  • 100g applesauce​

  • 120g olive oil​

  • 100g natural sweetener (e.g., xylitol)​

  • 1 tsp vanilla extract​

  • 20g agave syrup​

Filling:

  • Zest of 1 lemon​

  • 500g ground almonds​

  • 80g natural sweetener​

  • 100g dates​

  • 100g dried fruit (e.g., apricots)​

  • 2 tsp almond extract​

  • 20g agave syrup​

Topping:

  • 150g dark chocolate (stevia-sweetened)​


Instructions

  1. Prepare the Pastry: Blend dates and oats until fine. In a bowl, mix yogurt, olive oil, applesauce, vanilla, agave, baking powder, and sweetener. Add the oat-date mixture and flour, stirring to form a dough. Chill for 15 minutes.​

  2. Make the Filling: In a food processor, combine lemon zest, dates, dried fruit, sweetener, almond extract, almonds, and agave syrup until a paste forms.​

  3. Assemble: Roll out the dough and cut into desired shapes. Place filling on one piece, cover with another, and seal edges.​

  4. Bake: Preheat oven to 180°C. Bake Figolli for 20 minutes or until golden.​

  5. Decorate: Melt dark chocolate and coat the cooled Figolli. Decorate as desired.​
